Blue Circle Foods launching mini salmon sausages geared toward entertaining

Blue Circle Foods is launching a line of miniature salmon sausages with an eye to holiday parties and entertaining, and is also planning to launch a new hot smoked sockeye salmon early next year. 

The Washington, D.C., U.S.A.-based company is partnering with Asheville, North Carolina, U.S.A.-based Spicewalla to launch Chili Lime Salmon Shorties. The miniature salmon sausages – about an inch and a half long – bring a “retro vibe” to an appetizer spread, Blue Circle said.

The mini links can be served alone, with avocado crema dipping sauce, or bundled up in pastry like “pigs in a blanket.”

“Our intention with this launch was just to bring something new and exciting to market,” Blue Circle Managing Partner Nina Damato told SeafoodSource. “Shorties are familiar yet different and that always resonates with consumers who like to try new things and who see food as a source of entertainment.”

The salmon sausages are also “better-for-you,” as they contain no nitrates, antibiotics, sugar, “or other junk,” Damato said. “Were in fish, not fishy ingredients.”

Like Blue Circle, Spicewalla is dedicated to taste and purchasing in small quantities from quality suppliers, which “creates a fresher and more flavor-packed spice blend," Damato said.

The Salmon Shorties are a limited-edition product available on Blue Circle’s website and at Pop-Up Grocer in New York City, New York, U.S.A.

“We are prepared to respond to retailer interest as well,” Damato noted.

Last April, the manufacturer rolled out a line of frozen full-size sausages in four flavors: original, lemon dill, Italian, and apple thyme. The company also makes salmon breakfast links.

The company’s sausage offerings are about “providing the opportunity to experience seafood in a new way and to introduce more seafood to the American table,” Damato said.

Next up for the supplier is a hot smoked sockeye salmon product, which will launch in the first quarter, in classic and pepper flavors.

“This is a moist and delicious smoked sockeye from Alaska,” Damato said.

Like its other smoked products, the new smoked salmon will contain no sugar, less salt than conventional smoked salmon, and no preservatives or artificial ingredients, Damato said.

“This is a rare feat, but our expert smokehouse is able to pull it off,” she said.
