Nordstrom Restaurant Group and Rubio’s Coastal Grill are among the restaurant chains featuring shrimp on their spring menus for National Shrimp Day on 10 May.
Seattle, Washington, U.S.A.-based Nordstrom Restaurant Group is featuring a shrimp burger made by Los Angeles, California, U.S.A.-based Del Pacifico Seafoods in all 200 Nordstrom Restaurant Group locations in the U.S. throughout May and June.
“We’re proud to once again highlight products that align with our values. The shrimp burger is not only versatile and delicious but also comes with an impactful story from Del Pacifico’s commitment to sustainability,” Nordstrom Restaurant Group Product Development Chef Michael Boyer said in a press release. “We encourage our customers to check out the Del Pacifico story and how their practices make an environmental impact with products you can feel good about purchasing.”
Del Pacifico supplies Fair Trade-certified wild-caught blue Mexican shrimp, and last year, it also debuted a farm-raised, Aquaculture Stewardship Council-certified Pacific white shrimp that is antibiotic-free, chemical-free, and preservative-free.
“The white shrimp adhere to the same sustainable methods of harvesting and processing at the company-owned, state-of-the-art processing facility where the shrimp are processed – flash-frozen once and shipped within just a few hours of netting,” Del Pacifico Chief Commercial Officer Jennifer Barrett told SeafoodSource at the time of its release.
Before introducing the shrimp burger on its spring menu, Nordstrom’s culinary team visited Altata Bay, Sinaloa, Mexico, “where they saw firsthand how we prioritize sustainability in every aspect including harvesting, farming and processing techniques,” Barrett said.
“There is an enormous amount of value partnering with establishments like Nordstrom Restaurant Group that share the same views on environmental responsibility and corporate stewardship,” Barrett said.
After the visit, the two companies worked together to develop the burger, which features a ginger-sesame glaze, lettuce, red onion, tomato, avocado, and jalapeño aioli alongside a side salad with spicy dressing, julienne vegetables, and crispy wontons. The burger is being sold at a price of USD 19.00 (EUR 17.20) in most markets.
“We think the shrimp burger will be a hit among those looking for something beyond a traditional burger – especially with the toppings and dressings their culinary team has paired with it,” Barrett said.
